Belgian Waffology

Run by François Kerckhof and his wife, Belgian Waffology is serving up Liege and Brussel style waffles in the Triangle.

The couple, originally from Belgium, came to North Carolina in 2012 and decided to bring a taste of home to Durham. The waffle recipe, the waffle irons, the sugar, the chocolate and even the giant waffle on the truck are all from Belgium.

Brussel waffles are the classic (to Americans anyway) yeasty, fluffy, squares and the Leige are dense, chewier and made with pearl sugar.

Belgian Waffology’s menu is extensive ranging from the uber indulgent “Guilty pleasure” –  waffle, nutella, whipped cream, hot chocolate fudge, walnuts to a savory “Green carpaccio” - mushrooms marinated in lemon juice, olive oil, scallions, ground pepper, sea salt, arugula, and shredded parmesan.

For a Saturday afternoon treat, I opted for a Leige style topped with fresh strawberries. They’re making the waffles fresh upon order, so it does take a bit for the orders to come out. It was a piping hot, golden, dense cake topped with fresh berries and fresh whipped cream.

Belgian Waffology is bringing something unique to the streets of the Bull City and I look forward to trying more of their pocketed treats.
