The Cookery Open House

There are two types of people in this world—people who talk about doing things and people who actually do them. Rochelle Johnson and Nick Hawthorne-Johnson are visionaries, creators, risk-takers, and most importantly, they are doers. And on Thursday, April 7th, from 7:00 – 9:00 pm, our food community will be able to take a first-hand look at the fruits of their inspiring labors at the official open house for The Cookery, Durham’s first culinary incubator space.

The Cookery’s concept is simple, but rather ingenious. The West Chapel Hill Street space, which locals will recognize as the site of Durham’s old food co-op, will operate as a certified kitchen. Here, caters, restaurant staff wanting to expand their space, food truck owners, and anyone else needing a certified kitchen will be able to pay a yearly fee for use of the space, which will be open 24 hours a day, 7 days a week. Additionally, The Cookery will provide instruction on successfully starting and running food-related small businesses. As Nick explains, “opening up a food business is a major endeavor, full of risk. The Cookery will help to lower the risk of starting a food business by providing invaluable resources for food entrepreneurs and by making information about the food world more accessible.”

Rochelle agrees and notes that “Team Cookery” is excited to be a part of up and coming Durham food businesses as they take advantage of The Cookery’s space and curriculum. “We are excited to work with the inherently creative, disciplined, self-starters who will be strategizing to start their own businesses.”

Even more impressive than The Cookery’s community-oriented focus is the fact that Rochelle and Nick went from developing The Cookery’s concept to opening The Cookery’s doors in just ten weeks. Ahem, ten weeks. If you are like me, and are dying to see The Cookery’s kitchen facility, you’ll have your chance at next Thursday’s open house. In addition to touring the facility, you’ll be able to dine at some of Durham’s finest food trucks including the Pie Pushers, Slippin’ Sliders, the Sausage Wagon, and more!
